Bacon Wrapped Pepper Jack Green Onion Bell Pepper Stuffed Duck Breast with a Candy Orange Crush Honey Glaze! Really? Yes, and here's how you do it...

*Before you fire up the grill,  do a quick equipment and ingredients check to make sure you have everything needed for this recipe?


Equipment

1 Carson Kit

1 Carson Medium Skewer

A Charcoal Grill

A large cookie sheet

A Sharp Knife (I love this knife!)

A good pair of tongs

At least a 1/4 tank of propane

A Large cutting board

Sauce Pan or Small Skillet

A Basting Brush


Ingredients
Yield: 20 - 2oz Slices

2 Duck Breast 

1 Stick of Real Butter

3 cups of Orange Soda

1 cup of Honey

Green Onions

Pepper Jack Cheese

Bell Peppers

Butter Milk

Bacon


Do you have everything listed above and is all of it in fine fresh working order?

Yes - (Then proceed to getting your grill on!)

No - (Either roll with what you got or wait until you're ready to rock.)

Prep Directions

Step 1.) Soak duck breast over night in half and half to get all the blood and game taste out.

Step 2.) Butterfly the duck breast.

Step 3.) Take 1 slice of bacon and 1 duck breast and roll a slice of bell pepper, green onion, and pepper jack cheese up like sushi

Step 4.) Skewer through the ends where the bacon ends meet.

Step 5.) Repeat until you have a fully prepped basket and/or skewer.

Now you're ready to spin some Duck!


Sauce Directions

Step 1.) On a stove top caramelize a stick of butter, 3 cups of orange crush, and 1 cup of honey on medium eat.

Step 2.) Stir until the bubbles are gone then keep at low heat until you're ready to baste.


Grilling Directions

Step 1.) Place fully prepped skewer of bacon wrapped duck on a preheated high-heat rotisserie and let spit roast and self-baste for about 20 minutes.

Step 2.) Baste the duck as it rotates as liberally as you like with the orange crush honey glaze.

Step 3.) Once bacon is cooked to a golden bacon brown and duck is medium rare, serve directly from the skewer and slice into sushi rolls like in the recipe photo above.

Carving Directions

Step 1.) With the back of the knife slide each wing off the skewer on to your large cutting board or on to everyone's plate like they do at the Brazilian Steakhouses if desired.

Step 2.) Wipe tears from eyes with crying towel if needed because this shit's amazing. HA!

*Place any wings left on skewer back on the grill (Top Row) until anyone is ready for more!

Now remember these directions are just a guideline. Follow it as closely as you can the first few times. Once you feel you're getting more comfortable with it, then try to turn it up a bit by putting your own spin on it.
