This Chicken Cordon Blue Recipe grilled over and open flame using a Carson Kit - Weber Kettle Charcoal Grill set up is cheese so one of my favorites. You must try and let us know what you think!
*Before we fire up the grill, lets do a quick equipment and ingredients check to make sure we have everything we need for this recipe?
1 Carson Medium Skewer
A large cookie sheet
A Sharp Knife (I love this knife!)
A good pair of tongs
At least 4-6lbs of charcoal
A Large cutting board
A Basting Brush
2 whole chicken breasts
2 slices of Muenster Cheese
2 slices of Prosciutto
Do you have everything listed above and is all of it in fine fresh working order?
Yes - (Then proceed to getting your grill on!)
No - (Either roll with what you got or wait until you're ready to rock.)
Step 1.) Light the charcoal in your weber kettle. By the time you are done prepping your skewer your charcoal should be hot and ready to cook.
Step 2.) Butterfly the chicken breast like you see in the video below.
Step 3.) Sprinkle the inside of the chicken breast with kosher salt.
Step 4.) Place 1 slice of muenster cheese and Prosciutto inside the two beautifully butterflied pieces of chicken.
Step 5.) Roll the chicken breast up like a sushi roll.
Step 6.) Slice into 1 inch to 2 inch thick pieces and skewer one at a time on a medium skewer.
Step 7.) Put about a cup of parmesan cheese and thyme mixture into a blender and sprinkle liberally over the skewered chicken rolls.
Now you're ready to spin your meat!
Step 1.) Place loaded skewer on bottom row of your hot kettle kit and let grill for about 30 minutes or until it reaches a golden brown cheese color.
*If you want to get real cheeky with it then squeeze some dijon sauce over the chicken about 1 to 2 minutes before its ready to come off.
Let that spin a minute or two longer then clang the dinner bell because its time to get your nosh on!
Step 1.) Slide one by one off the skewer on to a plate or slice evenly down one side of each piece of chicken cordon blue like you see in the video below and enjoy!
*Slice as much as you like or re-season with a little parm and place back on the grill (Top Row) until everyone is ready for more!
