This Parmesan Pork Tenderloin Recipe slow spun on a Carson Kit and over a nice and hot hickory wood fire is an 11 out of 10. Modern day rotisserie technology meets primitive campfire grilling. You must try and let us know what you think!
*Before we fire up the grill, lets do a quick equipment and ingredients check to make sure we have everything we need for this recipe?
1 Carson Medium Skewer
A Fire Pit
A large cookie sheet
A Sharp Knife (I love this knife!)
A good pair of tongs
A Large cutting board
A Basting Brush
1 whole Pork Tenderloin
1 cup of Parmesan Cheese
1/4 a cup of olive oil
Herb Seasoning (I love Wonder Green)
Do you have everything listed above and is all of it in fine fresh working order?
Yes - (Then proceed to getting your grill on!)
No - (Either roll with what you got or wait until you're ready to rock.)
Step 1.) Pre-light your fire in your fire pit.
Step 2.) Slice the pork tenderloin against the grain into 2 inch thick pieces.
Step 3.) Skewer each medallion one by one against the grain.
Step 4.) Sprinkle kosher salt all over the skewered tenderloin.
Step 5.) Baste with olive oil.
Step 6.) Sprinkle herb seasoning all over the skewered tenderloin.
Step 7.) Sprinkle parmesan cheese all over the skewered tenderloin.
Now you're ready to spin your meat!
Step 1.) Place loaded skewer on bottom row and let grill for about 30 minutes or until it reaches the color you see in slide 9
Step 1.) Slice evenly down one side of the tenderloin like you see in slide 10.
*Slice as much as you like or re-season and place back on the grill (Top Row) until everyone is ready for more!
Be sure to check out the quick walk through video below.
Now remember these directions are just a guideline. Follow it as closely as you can the first few times. Once you feel you're getting more comfortable with it, then try to turn it up a bit by putting your own spin on it.
Inspiring a rodizio revolution and loving every minute of it!
