Seasoning for Argentinian grill sauce (beef, pork, poultry and fish)
Chimichurri, THE traditional South American grill sauce made from herbs, vinegar and olive oil must not be missing from any churrasco or rodizio.
Delicious with grilled beef as well as suitable as a marinade for beef, pork, poultry and fish.
Basic recipe:
Let 1 part chimichurri mix steep with some warm water.
Add 1 part red wine vinegar and 3 parts good olive oil, stir well and let steep. Can be kept for several weeks with clean handling and storage.
Tip: Enhance the taste with red wine, lime or lemon juice, fresh herbs, onions, chillis and garlic.
Season to taste.
Store in a cool, dry and dark place.
