🍹 Island Ember

A smoky, sultry welcome that ignites the senses and sets the tone for your island experience.

Ingredients (Makes 8 cocktails):

  • 475 ml (8 - 2 oz Shots) of Roasted Pineapple Rum 

  • 4 Squeezed Limes

  • 128 ml (8 - .5 oz Shots) of Velvet Falernum Liquor

  • 2 dashes Tiki Bitters per cocktail

  • Pinch of Smoked Cinnamon (plus extra for garnish)

  • Flamed Orange Citrus Twist 

  • Fresh pineapple chunks


🔥 Prep: Roasted Pineapple Rum

Infuse in advance:

  • Cut fresh pineapple into thick rings or chunks.

  • Roast at 400°F until deeply caramelized and golden (~25–30 minutes).

  • Cool and add to a bottle of quality aged or dark rum.

  • Let infuse for at least 24–48 hours, then strain.

Optional shortcut: Use a quality pineapple rum and enhance with a few drops of roasted pineapple extract or essence if time is short.


🧪 Build Method:

1. Chill a double rocks glass or coupe in advance.

2. In a shaker, combine:

    • 60 ml (2 oz) Roasted Pineapple Rum

    • Squeeze of half a Lime

    • 15 ml (0.5 oz) Velvet Falernum

  3.  
    • 2 dashes Tiki Bitters

  4.  
    • A tiny pinch of smoked cinnamon

3. Add ice and shake hard for 10–12 seconds.

4. Strain into the chilled glass.


🍍 Garnish:

  • Flamed Citrus Twist (expressed over the drink)

  • Lit cinnamon stick cross-lay
